Ice Cream Cake Recipe

Ice cream cakes come in all shapes, sizes and flavors. There’s absolutely no limit to what you can do to create an ice cream cake. From the simplest of ingredients such as cookies, butter, your favorite candy bar and of course ice cream, to the most complicated of cake recipes and your favorite ice cream.

Regardless of the ingredients, the basic construction technique for any ice cream cake is the same. Layering. Some ice cream cakes are small, hand held treats, with wafer thin cake on the outside with a thick slab of ice cream in the middle. These are often referred to as ice cream sandwiches and are available in the freezer sections of local grocery stores. Other ice cream cakes are decadent creations piled several inches high and available only at specialty shops or in your own home.

Ice Cream Cake Recipe

This variety of ice cream cake is a special indulgence that takes a little while to prepare, but is well worth the effort. Start with your favorite freezer proof container. The bottom layer is always your cake. Make the layer as deep or as shallow as your heart desires. The next layer is ice cream that has softened just enough for you to manipulate. Be careful not to allow it to thaw completely. The one thing to remember when making one of these ice cream cakes is that each layer is the same depth, so if you start with a deep layer of cake, you will want an equal size layer of ice cream. On top of the ice cream, you add more cake and repeat the process until your ice cream reaches the height you want, as long as the top layer is cake and put it in the freezer to set. If you like, you can even put frosting over the entire thing before placing it in the freezer.

A variation of the ice cream cake replaces the cake with your favorite cookies and candy bar. The bottom layer consists of a combination of cookie crumbs and butter spread in a thin layer in the bottom of the pan. The ice cream layer can be thicker if you prefer, and is topped with a layer of the chopped candy bar. Once it’s all finished, freeze it for several hours before serving. You can make this variation as tall as you like, just remember to make the candy bar the top layer.

Another quick and easy ice cream cake can be made with the ice cream sandwiches described above. To start with, buy sixteen to twenty four ice cream sandwiches at the grocery store. You will also need of whipped cream, caramel or fudge topping and candy bars. Place the ice cream sandwiches in a rectangular pan and top them with the fudge or caramel topping.

Add a layer of whipped cream and repeat with another row of ice cream sandwiches, topping and whipped cream. Crumble the candy bars on top and add if desired, chopped M&Ms for garnish. Put the finished cake in the freezer for several hours before serving.
